But in late summer, corn on the cob with fresh tomatoes and cole slaw is my hands down favorite thing in the entire world!
Right now my favorite vegetable dish is coconut-cashew butter curry with broccoli (but I’ve put in sweet potatoes and greens and red peppers to good effect).
It’s hard to pick! I grew up being served at least two vegetable dishes plus salad for supper, and don’t feel fed unless each meal has multiple plants included (even breakfast).
Your asparagus tart reminded me how much I LOVE any asparagus- usually a simply seasoned and roasted or grilled dish will do. I’ll have to give the tart a try!
