It is so frustrating the comments and questions on vegetarians and protein! I think this is an excellent podcast which covers the whole question of protein really well for vegetarians, vegans and omnivores

Hello, That also surprised me when I first went vegetarian the first question was "what about your protein?". My thought was always - "but what about your fibre, vitamins & minerals?" - fibre & vegetables were always a big focus of my parents, and now me, for good health.

Besides, I'm always drawn to the colours of salads & vegetables. Loving your recipes Hetty.

I love your cookbook and your letters. Your are a refreshing chef to read because of your focus on a plant based diet. And I agree with you that a vegetarian/vegan diet can meet protein requirements. But I worry when you say that it is not important to ensure that one gets enough protein. I occasionally eat fish, and I do eat cheese, so getting 55 grams of protein per day for me is achievable. But for vegans it is harder, because vegan cheese has minimal/no protein. My daughter-in-law is vegan, and she has introduced me to sprinkling chia seeds, hemp seeds and flax seeds on anything I can. We also eat rice frequently. But my rice has "smuggled" quinoa and lentils for added protein (1 cup rice, 1/4 cup lentils and 1/4 cup quinoa). Emphasizing that a vegan/vegetarian diet is healthy and achievable is important, with the caveat that a multi-vitamin, supplemental B12, and a diet rich in plant proteins is important. Thanks for your thoughts Joan. I don’t mean that protein isn’t important, my point is just that many people think that only meat has protein, whereas protein can be found in many foods in the plant-based world. Hope this clarifies it. Thank for reading! Hetty

I made this and used my immersion blender to get a creamier texture. Now I’m enjoying leftovers with roasted carrots and rice. Thank you, Hetty! Split peas are no beauty queens but everything is prettier with a little cilantro!
