My chickpea anxiety story is the year that — through a combination of my own shopping amnesia and some remarkable delivery stuff ups — we wound up with 7 tubs of strawberry oatly ice cream in the freezer. It became our go to snack for a while: friend comes round? Strawberry oatly; Need to take something with you to a dinner party? Strawberry oatly. 🍓
It is so good, a very happy accident to have! but we kept winding up with strawberry instead of plain oatly 😂 strawberry ice cream on chocolate pudding is just not the same!
That sounds like quite the adventure in ice cream acquisition! Seven tubs of strawberry oatly ice cream must have made for quite a freezer surprise. It's funny how life can sometimes shower us with unexpected abundance, isn't it? I hope your friends and dinner party hosts were as amused by the strawberry oatly abundance as you were! Did you manage to make a dent in the stash, or did it become a long-running joke in your household?
Creamy peanut butter (for my daughter). Had 3 jars but luckily just finished 1.
And tortillas… we either have at least 4 packs which mean some end up in the freezer. Or none, but so much cheese. For some reason the cheese/tortilla ratio is rarely aligned 🫠 (Mexican household so quesadillas are pretty much a daily thing)
YES Peanut butter....that is a good one. It's honestly indispensable and 3 jars is about right LOL. tortillas, I love that. This might be a new anxiety of mine (I say this but I have both flour and corn tortillas in my fridge usually LOL)
My husband makes a panini sandwich every day for his lunch. I'll have to try that pesto recipe! My kitchen woes were some over roasted asparagus this week...which I then turned into pesto! I made. it with parsley from the garden, fresh lemon juice and pistachios. Turned out delish on pasta,....toped with some spicy sauteed mushrooms! It was a stoke of luck!
Canned pumpkin! I seem to use it often once I start- adding to soups mostly- then I’m out! And buy every trip to the store until I find 7 cans. I’d love more ideas to use it! Pumpkin and tofu????
Ok I feel like this was a weird one and I honestly didn't think anyone would say canned pumpkin but I HAVE THIS ANXIETY TOO. Which is bizarre because I rarely use it but if I use the one in my pantry, I always have to buy another to make sure there is always one in my pantry! LOL too funny
Have you tried the sweet potato and black sesame bundt in Tenderheart? I usually sub the sweet potato with canned pumpkin puree. There's also a lazy pumpkin tiramisu in the book that I also use the canned pumpkin for
tinned tomatoes are my chickpea anxiety item, but also rice wine vinegar. I ended up with three bottles of that staring at me shamefully from the pantry shelf
we don't use it for much at all! stirfrys and dressings or dipping sauce generally, but it's something I have on my mental 'must keep in stock' list so I got a little carried away. My husband tells me I've done the same thing with Xiaoxing rice wine - two full bottles and one part used on hand. We REALLY don't use much of that so running the stock down will take a while
I have spaghetti anxiety! I make 3/4 of a pound for our family of three, and I never know if I have the right amount. My husband asks me not to make pasta more than once a week and it’s long enough that I lose track.
Mine was always tinned tomatoes – though I also had a period of time when I could never remember if I was running low on cumin or coriander and always bought the wrong one! So. Much. Coriander.
OMG TRIGGERED!!!! Cumin and coriander, I have that anxiety too. And apparently star anise and black peppercorns because I have more than 2 jars in my pantry right now LOL
My food-related anxiety is "do I have enough garlic?" I put garlic in everything; and I don't like the jarred stuff. So I always have at least 10 or more garlic heads in the box and I plant at least 16 pots (huge pots!) of garlic every year. And I always run out anyway!!
I love the idea of the pesto sandwich - of course my pesto has a whole head of garlic in it ;) and basil, spinach, maryoram & lovage. I spice it with Aleppo pepper & coriander seeds. I definitely need to make some sourdough panini -- never tried that. I'll add that to the list of stuff to learn. I make whole grain sourdough all the time; just never even thought of panini. Thanks for the inspiration!
WOAH, a whole head of garlic in pesto. I need to try that!!!!! I think I only use 1 or 2 cloves because I don't buy enough garlic and only ever have 2 heads at a time (because that is what fits into my garlic jar, clearly I need a bigger vessel haha)
Coming from a background of scarcity mentality passed down from my parents I was grateful to always paying attention to what is on special and buying up large on things I live. Right now my chickpeas are peanut butter, especially Fix and Fogg’s Smoke and Fire Peanut butter. It goes so well in this vege and tofu-packed ramen-style broth I am making that centres the broth and veges and then I add a little bit of noodles in the end. So filling and warming like a warm hug!
I have vegetable broth anxiety! I usually go grocery shopping on my way home from work, and I can never remember if I have broth at home. I should probably make my own, but I can never think that far ahead! I'm on my way to the store now, and I'll probably end up buying a carton. :)
Hahah that’s a good one and understandable too. I use powdered stock but even then, I buy multiple packs at once and also have the Better Than Bouillon in the fridge so I have several sources 😂
Dried mangos and nuts for snacks. I buy them in bulk. It is annoying when I come home from grocery shopping, and the jars are still pretty full (especially if I am low on spare glass jars!). I have to figure out how to keep them safe and dry... 😌
NUTS. absolutely. I feel anxious if I run out of walnuts, almonds or peanuts. also I have to have a stash of pecans....not sure why since I don't use them often LOL
I think I’ve gotten over my chickpea anxiety, thanks to an over-supply of dried beans from Rancho Gordo! However, I seem to have lots of tomato paste in my pantry - I always throw 2 cans from TJ’s in my cart!
I’m really bad about checking my supplies so I’ll read a recipe and think “that sounds good” and then purchase every item on the ingredient list. Needless to say I have multiple jars of capers, anchovies, spices etc but quite often no salt or oil or some other absolute pantry essential 🤦♀️

Instead of chickpeas my anxiety is coconut milk. I have several tins of coconut milk in the cupboard.

I make some different slaw recipes and they all need 1/4 cup rice vinegar. I run through bottles so quickly! Especially once the weather warms up.

peanut butter is definitely a pantry essential. I use it in so many things. And I also eat it straight from the jar 😂

This is slightly problematic, as my kitchen is tiny, but I do find them very useful ingredients for so many things.
