I made this tonight and it was amazing! The crunchiness (is that even a word?) and nuttiness of the toasted quinoa really pulled it all together. I used a vegan goat cheese and instead of tossing it all together, I dotted the vegan goat cheese on top. It was delicious! Completely worth turning on the oven in the middle of a heatwave!
I made this salad tonight for myself and husband. It was delicious ! I loved how the quinoa tasted after roasting it in the oven; nice texture too. Contributing to the great flavors with the roasted vegetables, was the kick delivered by the crushed red pepper. Excellent! Thank you Hetty!

There is no mention of the smoked paprika in the directions - assume it is mixed in with veggies along with olive oil and balsamic vinegar, etc.?

This sounds delicious, Hetty. Is there another grain that would work well with this technique, in place of the quinoa?
I have some cooked millet and I find that works really well either baked like this recipe or pan toasted after it’s cooked.
