How did you know I have a lowly zucchini in my fridge that's in need to being stuffed?? And I just bought lots of fresh tomatoes--and I've been wanting to make my own Ricotta! This is a perfect recipe that brings it all together! Thanks bunches!

I’m definitely making this recipe this week given that it looks amazing, and that there are an abundance of zucchini at the farmers market!

I’m actually missing the summer produce right now, despite loving all the food in Sydney.

This recipe sounds and looks delightful. I just want to make sure...you do not blanch the tomatoes in the coulis? The recipe sounds very fresh tasting and luxurious...with the herbed ricotta filling. It sounds like a lovely Summer lunch to make for a friend! Now I just need to wait for the garden produce to ripen. Can't wait to try it. Thank you.

No blanching, the tomatoes are raw! Super fresh and bright. I hope you enjoy it.

Great recipe! I served it all over orzo and added some chopped fresh baby spinach to the ricotta. HLM never disappoints.

Out of ricotta, subbed Boursin and a bit of fresh local feta.Otherwise followed. What a delicious lunch using zucchini that were "slightly going" and fresh garden chives.
