Pav bhaji is so delicious. A friend from Amehdabad taught me how to make it. There are several excellent South Asian groceries near me, so I just buy a Pav Bhaji spice packet when I make it as these are fresh. Buttery spicy veggies now and then are a good thing!
I have traveled once to India and loved it. The food of course. As the most vegetarian country there were many yummy options. I also remember being greeted everywhere with eye contact and kindness. I thought to myself, spiritualism (reincarnation) is a great thing for a society. In some ways it puts us all in the same boat. One of my main takeaway was India was that India was like a bustling fairytale with ancient and modern influences coming together. You could find six people riding on a motorcycle, elephants, expensive cars, carts, busses all driving on the same road and while chaotic to see...it worked!
My second and youngest left for college last Wednesday. Like you, cooking for my family is a way I love them so everything about food preparation will feel a little empty. It gets easier. Thanks for all of your recipes and writing.
It feels so weird, right? I find myself thinking of ingredients she doesn’t like and realizing I can now use them etc. Hope you’re doing okay too. Thanks for sharing your experience 🥹🙏🏽
Pav Bahaji, what a fabulous dish. Although I really need to make it just for two as the leftovers aren’t as good which is surprising for any flavourful dish like this. I end up doing the same with Dahl and we seem to be eating it forever. Great post once again,
