This rice dish sounds wonderful. I was gifted a tagine and have still not used it. Do you think it would work for this dish? Should I give it a go and be the guinea pig? Thank you.

This feels like a gift on this rainy Monday. I had the most nourishing clear mushroom broth with scallions and shiitakes last night and I woke up craving more of those flavors. We’ve been living on rice this week (Sushi, Chinese take out, rice bowls at home) and we all feel nourished but lighter. I loved learning that the Cantonese call for dinner means eat rice.🤍

Rice is the ultimate source of comfort and nourishment. And is so versatile too. More rice for us tonight too, a Thai curry rice soup which came about as a bit of an accident but so good I might have to share! Hope you and yours are well. xx

I just happened to find 6 lbs - yes, 6 lbs! - of both Chicken of the Woods and Hen of the Woods yesterday - and then this pops into my feed. Perfect timing! Just made it. LOVE the chewy crispy rice on the bottom (although maybe not the best thing for my newly installed Invisaligns?). Added some chili crisp - I'm new to that condiment and added a bit too much, but that's okay, it just means I had to dilute the heat with an extra scoop of mushroom rice. Great dish. With more meaty mushrooms like these Chickens and Hens I added 5 min to the second round of 10 minutes. Thank you for this recipe!
