Made this tonight for dinner. Delicious. If you have homemade hummus lying around like I usually do, you can skip the herby creamy chickpeas bit of the recipe. Still added lots of dill and parsley on top. Also included sticks of tempeh same size as the carrots, to make it a bigger, more filling meal...

The cost of groceries that are uber cheap is paid by the environment and the farmers growing the food!! Nearly all of the food we find in supermarkets, like those dirt cheap carrots, are grown with artificial fertilizer, pesticides and herbicides that are causing utter destruction to the land :( not everyone can afford to but if you can please buy organic !!!

Thank you so much for this post. I love this recipe and have put it on my list to make soon.

I'm happy to have fresh peas in spite of the time needed to shell them. Could I put them in the recipe (the first part) instead of chickpeas?

I like the idea of combining peas, carrots and lettuce.

Delightful! I also have been noticing grocery prices of late and especially when I travel, I like to compare how much the basics are. I was just ordering some groceries for my SIL in New Jersey today from wegmans and I was flabbergasted how much cheaper her chickpeas are than they are here in highland park, IL. But we love chickpeas and like you said, still so economical and delicious. Though then there’s the other part about stuff like eggs and I’m like maybe eggs and meat and fish should be expensive because of the labor and the time and the care (if obviously done sustainably and with care??). But then who gets access to that? So then I think in circles and nothing gets done. This recipe looks amazing.

I agree about eggs and meat, a lot goes into its production so I think it’s legitimate that they are viewed as a luxury item. I treat eggs as such nowadays.

Omigod, 35p for chickpeas? That converts to $0.45 US or $0.65 Canadian. Were they on sale? A can chickpeas is like $1.95 Canadian for store brands in Toronto.

This sounds amazing, I have read previously about using the liquid from chickpeas as a thickening agent, but like most of us it is poured down the drain, but not this time, I will definitely give this a go. I enjoy cooked lettuce, particularly with peas, but now I have something new and delicious to cook, and you know me it will be served with some meat.

I made it a couple of times with maple syrup. It is extremely good, but I found it a little bit too sweet for my taste. I tend to end up with half used bottles of pomegranate syrup that I can’t think of any use for. I tried it yesterday with pomegranate syrup and it’s excellent.

This looks so good and I plan to make it! Question-- if I wash the lettuce first to get rid of dirt, should I spin it dry before roasting? While you chop it first before washing ?

I washed the lettuce and it was fine. I left the water on. It salves my anxiety about roasting lettuce.
