Am excited to make this dish! I’m an older male retiree and I’ve just discovered the wonderful delights of your recipes Hetty! Wow!😍 I subscribed to this “substack”(?) yesterday and also bought your book “Community” from the local bookshop. Looking forward to the culinary journey (and also the release of “Tenderheart”!) Many thanks Hetty!🙏 👨🌾😊
What a beautiful-looking dish [Hellimli Sebzeli Kebap]. I am really enjoying some of your recipes, Hetty, that I've made recently with eggplant. I've always felt intimidated by eggplant for some reason. LOL. However, I've discovered it has a lovely velvety texture when cooked right. I will definitely try this recipe soon.
Thanks for sharing the details the Sebze* cookbook. :)
Yay I’m so happy to hear that. I hear this same thing allllll the time about eggplant but you are right, it’s all about cooking it right. You’ll really enjoy this one. Thanks for reading this newsletter 🙏🏽
Yum! What is pul biber? I don’t have the book yet :)
Yes it's Aleppo. I substituted with a little chili powder!
I just had the same question and looked it up: Aleppo Pepper
Thanks for that!
it is so mesmerizing to learn about vegetable dishes I have literally never ever heard of before - looks and sounds divine!!
I agree!! I love learning about the world through food and the cooks/writers who share them.
<3<3<3 you said it.
