Oh it's just a tradition that I cook an octopus which then gets used over a few days. So one day it will be the tentacles as a main meal with salads and potatoes (med to levant leaning) and then the body gets used in things like a cold noodle salad. The WA octopus is fantastic (and was recently found to be its own species distinct from the eastern states occy). I have a method that involves cider rather than white wine, but reading Danielle Alvarez's new book I may use her method this year.
