This sounds delicious! And I have just the necessary ingredients at home!

As for a glut of carrots, my favourite recipe to make is Turkish carrot “salad”. It’s sort of tzatziki meets carrot slaw - you mix grated carrots that have been sauteed in olive oil and garlic until tender into Greek yoghurt and season with salt and pepper. Simple yet really delicious.

Can I just say if you want to use dried beans and you can afford it get a pressure cooker. But the quick soak works well too

Thanks for the suggestion! I’ve never owned a pressure cooker, I don’t have much room for more equipment but I can see it would be very useful.

Quick-soak sounds great! Rancho Gordo also never soaks overnight… This is the way!

Well this looks cozy and delightful! I've never tried this quick-soak bean method. Thank you for sharing!!

I used to buy a lot of carrots because my dogs love them, but now I've been roasting them most nights with all of my other veg — and they are SO GOOD. It's easy to forget since they're such like a "salad vegetable" that they're good all roasty and toasty.
