If you liked Bethlehem, you will love Filasteen. Both are incredible books, written with depth and heart by incredible people. Heart breaking that these people, the Palestinians, are being so brutally exterminated and their culture erased by zionists.

Do you mean Falastin by Sami Tammini? If so, I have owned that for many years. It’s also wonderful and have cooked from it a lot.

Sami makes the stories, the recipes and the food come alive. You can almost smell the oranges, the za’atar and the olive oil!

I believe Fadi Kattan is also involved in Louf, a newly opened restaurant in Toronto. I’m looking forward to trying Louf this year. Thanks for sharing the eggplant recipe! I also want to try the recipes in Bethlehem.

A Bay Area Japanese chain store, Nijiya had Japanese eggplant, I made the dish last night. it's wonderful and easy to make. Another recipe readers might like - the Winter tabbouleh with blood orange from Falastin. I've completely gotten into all the vegetable chopping and it is so worth it.
