Hetty, do you think I could make the logs in advance and freeze them?

Yes absolutely! I included the instructions in the storage notes at bottom. You can also slice the log into discs and freeze. Happy holidays!

Definitely adding these to my Christmas box! I happen to have fennel pollen from making LBJ greengage and fennel jan which I was thinking to use in jam drops. I am looking for an Australian style jam drop recipe as it's also a favourite of mine. What jam drop recipe do you recommend Hetty?

I prefer a nutty jam drop. I usually use this recipe from NYT cooking (there’s a paywall) - https://cooking.nytimes.com/recipes/1020653-thumbprints-with-dulce-de-leche-nutella-or-jam?smid=ck-recipe-iOS-share

But this King Arthur Baking recipe looks similar - https://www.kingarthurbaking.com/recipes/thumbprint-cookies-recipe

Fennel is such an evocative flavour for me - I can't believe I have never had it with chocolate before, so I'm very excited to give these a go!

Fennel and chocolate is so delicious! If you are a fennel person it is so good!

I love anything fennel (anise) flavored, so this recipe speaks to me. I can’t wait to bake them soon!

I made them and they are incredible! The flavour pairing is great; the chocolate pairs amazingly well with the fennel, and the orange zest brightens everything up. I like the use of the almond mill as it makes the cookies very light in texture. I made them for my mom who doesn’t eat a lot of desserts, but as soon as she ate one, she couldn’t stop and ate a couple in a row! “Not too sweet” is what she told me. I am sure I will keep making them in the many following years, thank you so much for sharing this recipe with us Hetty!
