Do you have any guidance on “baked tofu.“ I have a bunch of recipes. Just plain or should I add spices?

The baked tofu is store bought. This is an example but there are lots of brands - https://www.wholefoodsmarket.com/product/wildwood-organic-savory-baked-tofu-b00ftbcw7y

They are great because they don’t have to be cooked. They can go straight into salads.

As an alternative, you could panfry or bake extra firm tofu. I’d season with salt and pepper and perhaps toss on a little soy sauce before cooking.

Oh Hetty, dear Hetty ... First, the book is gorgeous. I can't wait to hold it, to cook from it and to be in the kitchen together through your recipes.

Second, thank you so much for writing about doubt. It is such a present feeling in the work we do. Yesterday, I was at a friend's book signing and someone said to me, "I see you've got a new book coming out." When I nodded yes, he asked, "Is it good?" All I could say was, "I hope so." We never know what to expect from each new day, but we can only hope for the best.

Jane Eyre has always been one of my favorite books. Another is To Kill a Mockingbird.

Making this right now. I’m roasting the cabbage because my husband requested something hot! But wow the sauce is divine. Very sexy moussey quality. I sense this is going to be a house favorite. We always have cabbage and tofu on hand. And peanut butter. Woooo!
