Love the combo of beets and lentils! So earthy and perfect for fall. I'll definitely be trying this but with home-cooked beets :)

I love recipes that use produce to hand in the pantry and fridge. I had three packs of precooked beetroots languishing in the bottom of my vegetable drawer, some mixed salad leaves, and open packets of puy lentils and pearl barley in the pantry. If I dig deep enough I may find some marinated feta lurking in the back of the fridge…

When I read “supermarket staples” and beets I immediately thought of canned cooked beets. But you meant the ones in the refrigerated section. Do you think they could be used interchangeably? Canned beets are so affordable and also pantry-friendly.

Are you in Australia, US or somewhere else? I like the ones in the refrigerated section because they are more neutral in flavour and so when you pickle them, you are added the right amount of acid. If you're in Australia, then canned beets are already pickled and yes, could definitely be used. The ones in USA are very sweet (or just for me?) and do you could use them but would maybe use less sugar. I'm sure you can tailor it to your own personal preference!

Thanks for your thoughts!! I’m in the US, and I’m not a beet lover usually, but I’m willing to experiment. I tend to like them best raw and grated (best salad: equal amounts raw grated tart apple and beets plus a big squeeze of lemon). Canned are appealing simply because they stay in the pantry and have recyclable packaging.
