Welcome to the first official installment of Choy Love Club, the paid area of To Vegetables, With Love. CHOY LOVE CLUB: Dinner Diaries will be a weekly(ish) email where I give you dinner inspiration for the week ahead - it will go out Sunday evenings or Monday mornings (depending upon where you are in the world).

I want this email to be USEFUL to you. For me, the greatest challenge during the week is WHAT SHOULD I COOK FOR DINNER TONIGHT? I ask myself this question almost the moment I wake up and it will occupy my thoughts until I have an answer. This always reminds me of something my mother would mutter to me a lot when I was a kid - the hardest part about dinner is not cooking it, but it is the THINKING about what to cook. She, as always, is 100% correct.

So this email is designed to give you quick, simple veg-heavy dinner solutions, which are designed to feed diverse palates (aka picky eaters lol). These recipes will come from my kitchen - the meals that I cook again and again for my own family. There will be recipes from my books, from my online recipes, and recipes from others too. I will also ask for your help in sharing the easy weeknight meals that YOU love with this community. Keep an eye out on the substack chat function where I’ll be asking members to share their weeknight go-to dishes.
